Chef Horst’s WineFood concept is designed to enhance the enjoyment of both wine and food by creating an aromatic, wine-friendly menu. Upon arrival, enjoy a wine tasting in the heritage-listed tasting room, and select a bottle or two to enjoy at lunch, before heading over to the chef’s kitchen, where a four-course meal will be prepared before your eyes.
The menu changes with the seasons, but always heroes locally sourced meat, fish and vegetables, as well as – of course – Shingleback Wine’s renowned vintages. You might enjoy shiraz-braised lamb shoulder, or perhaps a red wine and dark chocolate mousse. Specific dietary requirements can be catered to so nobody need miss out.
The use of a gentle wine reduction results in dishes with a balanced ﬂavour profile, which simultaneously unlocks the layers of fragrance found within the accompanying wines.
